Decadent Rich Mint Chocolate Pudding 1


pudding I just realized how much chocolate I have been eating lately… How many days have I been doing this? Three? Four? Oh goodness, at least its raw cacao! I should probably walk into a door right now, because I should not have made this pudding. It’s incredible… (I’m running out of new adjectives to use). This is rich, creamy, decadent, sinful, and dangerously divine.  All I want to do is grab the jar and go hide away in a closet. I’m going against everything I was taught in Elementary School; I will not share. Chocolate can do this to me. I become a selfish monster, no one can come near me if I have delicious chocolate in my hands. I will bite. Really, I will. I might share, maybe a little. As long as I get to sit next to you and watch you eat a few bites. Then when your eyes are closed enjoying the rich chocolate goodness, I will snatch your pudding and run away (and probably end up tripping or run into a wall). Grinning and giggling like a little kid who was naughty.

Seriously though, I can not express enough words to describe how good this pudding is! Do you want to know the secret ingredient? Avocados! Yeah, avocados… The key to making this delicious is; raw cacao (1 scoop, 2 scoops, 3 scoops, oh how about the whole bag?), honey, and a few accidental pours of vanilla extract. The avocado makes it smooth, creamy, and rich. Perfect pudding consistency! Plus it’s very healthy, so you really shouldn’t feel guilty. Even if you don’t feel like sharing, it’s okay, I understand. But I may trick you and make you go outside, while I lock the doors and quickly gobble up the pudding.

I made a lovely dinner last night which consisted of my homemade basil pesto (recipe coming soon) which was mixed in with zucchini noodles and sun dried tomatoes, topped with grilled chicken. It was amazing! I had my brother over for dinner and he asked me today when I will be having another dinner. He keeps coming to our house everyday to have gluten free toast with my chocolate hazelnut spread on it. It’s adorable. Okay, back to the dinner. Can you guess what was for dessert? This mint chocolate pudding! I topped it with chopped sprouted hazelnuts which added so much more flavor. When I served it to my brother, he put a spoonful of pudding in his mouth and all that he could say was “OH MY GOD! This is so good”. With his mouth half full of pudding goodness. And it was, it is! I want to keep telling you how good this is, but I really should stop now. I’m tempting myself, I really shouldn’t have anymore today… I really need to leave the kitchen and go on a vacation. I’m getting out of control, someone come take me away!

Okay, enough! I. Must. Stop… Here is the recipe for you to enjoy!

INGREDIENTS: Makes 2-4 servings

This is for a small batch, because when I was making a larger batch I honestly don’t know how much I was putting in. I was dumping cacao into the blender. I got a little out of control.

  • 1 medium organic ripe avocado (not too ripe, not under ripe. It really does matter)
  • 3 tablespoons organic raw cacao
  • 4 tablespoons organic raw honey (or maple syrup for vegan, I ended up doing both)
  • 1/4-1/2 cup organic unsweetened almond milk
  • “accidental” pour of vanilla extract
  • a good pinch of himalayan sea salt
  • optional: a few drops of peppermint extract (highly recommended) or zest of an orange (also highly recommended)
  • chopped organic sprouted hazelnuts for topping (highly, highly recommended)

Topping ideas: raw goji berries, cacao nibs, coconut flakes, dash of cinnamon (or in my case an “accidental” dump of cinnamon), fresh raspberries, fresh orange slices. It’s so versatile!

DIRECTIONS: 

  1. In a high powered blender (like a VitaMix, food processor works well too) blend all the ingredients until smooth, creamy and delicious. Adjust the ingredients according to taste and texture. Refrigerate the pudding and serve cold with chopped sprouted hazelnuts (or any other yummy delicious topping)

Isn’t that easy?? Which makes it a dangerous, delicious addiction.
