Flavorful Polenta Egg Breakfast Dish


polenta egg dishYum! What a perfect, healthy breakfast dish. Each bite is full of flavor and perfectly satisfies the taste buds and makes your tummy very happy! I love making this for breakfast in the morning. It sustains my appetite and keeps me going for most of the day. What is all in this? Well, I’ll tell you! From the bottom, we have fresh organic spinach (from our little garden) which was sauteed a little, a mixture of brown rice and black beans, non-gmo polenta, fresh basil leaf (from our garden), over easy organic free range egg, a few slices of avocado and then a nice sprinkle of parsley (from our garden 🙂 of course). Just about everything was cooked in coconut oil and seasoned with Herbs de Provence, himalayan sea salt, and some fresh pepper. Just an overall lovely dish! Lets wake up on a positive note and feed ourselves a healthy dish to start the day in a good way 🙂

INGREDIENTS: Serves 1

  • 1 slice organic non-gmo polenta
  • 1/4 cup organic brown rice and black bean mix
  • handful of organic spinach
  • 1 organic basil leaf
  • 1 organic free range egg
  • 3 slices organic avocado
  • 1 tablespoon chopped organic parsley
  • coconut oil for cooking
  • Herbs de Provence, pepper and himalayan sea salt to taste

 

DIRECTIONS:

  1. Heat some coconut oil in a skillet. When the pan is beginning to get hot, crack your egg in, season and gently flip it over to lightly cook the other side without breaking the yoke (there are a few different ways to cook an over easy egg, so do what works best for you).
  2. In a small skillet, heat a little coconut oil in the pan. Add the slice of polenta, season, and gently cook both sides until soft.
  3. Remove polenta from pan and quickly saute the spinach in the same pan.
  4. If your rice and beans are cold, use one of your pans you used for the egg or polenta and gently heat them up.
  5. To assemble: Lay the sauteed spinach on your plate in a little circle with a hole in the middle. Spoon the rice and beans into the middle of the spinach, top that with the polenta, then a large basil leaf, your egg, the slices of avocado, then sprinkle everything with the chopped parsley. Enjoy!

The recipe taste best with an over easy egg, because it adds moisture and helps bring all the flavors together. If you don’t like a runny egg, then I suggest topping the egg with pesto, salsa or a nice tomato sauce. Hope you enjoy!
