Flourless Chocolate Cake – need I say more?

Yet everytime I look, I want it so badly I almost start licking  the screen on my computer. It’s so rich and decadent and full of dark chocolate goodness. It’s SUPER easy to make and the batter… oh the batter… the chocolate glaze… oh the chocolate glaze… the homemade whipped cream… oh my the whipped cream… strawberries dipped in dark chocolate? Oh please just stop now… Now combine all that together into the perfect bite. What do you get? An irresistible, creamy, chocolate explosion in your mouth. The cake slowly melts on your tongue, creating new flavors over and over again. The whipped cream brings in a slight sweetness that blends perfectly with the chocolate. And then! You bite into the chocolate covered strawberry… If you aren’t already on the floor by this point then I’ll knock you on the floor. Seriously… Every time I took a bite of this cake I almost fell on the floor, bringing down the cake and chocolate heaven with me. Ohhhh Myyyy….. I MUST stop talking about it…

I made this cake for my moms birthday last weekend, it sure was a hit! When everyone left our house after the party my mom and I both looked at each other and said “Let’s have more cake!” then proceeded to run down the hall into the kitchen. Swung open the fridge, shattering glasses and knocking any food on the floor that was in the way. Then began to delicately eat the rest of the cake.

I promise you, you won’t want to eat any other dessert once you have this cake. Okay, maybe some other delightful chocolate dessert would do, but this cake is amazing! And you MUST make homemade whipped cream and add strawberries on top. It completely adds and makes this cake oh so heavenly.

INGREDIENTS: Makes 1, 8-inch tart pan cake

FOR CAKE:

  • 6 oz 70% organic dark chocolate bar
  • 1/2 cup (1 stick) organic butter (or non dairy butter)
  • 1 cup organic coconut sugar
  • 3 large organic free range eggs
  • 1/2 cup organic raw cacao
  • 1/4 teaspoon himalayan sea salt
  • 1 teaspoon organic vanilla extract

FOR GLAZE:

  • heavy 1/4 cup 70% dark chocolate chips
  • 1 1/2 tablespoons organic unsalted butter (non dairy, or coconut oil)
  • 1 1/2 teaspoons organic milk (non dairy, coconut milk)
  • 1 1/2 teaspoons organic raw honey
  • 1/8 teaspoon organic vanilla extract

FOR WHIPPED CREAM:

  • 1 cup organic cream
  • 1 tablespoon organic powdered sugar
  • 1/2-1 teaspoon vanilla extract

EXTRA DELICIOUSNESS: 

  • Organic strawberries dipped in the chocolate glaze, then set in the fridge to harden. Top cake before serving
  • Grate dark chocolate over the whole cake

 

DIRECTIONS:

For Cake:

  1. Preheat oven to 350 degrees
  2. Grease an 8-inch tart pan and set aside
  3. Melt 6 ounces of chocolate and butter in a heavy saucepan over low heat. Stir until chocolate and butter are melted and smooth.
  4. Add sugar and salt and reduce heat to low. Cook while stirring for about two minute, until sugar starts to dissolve.
  5. Stir in the vanilla extract
  6. Remove pan from heat. Whisk in eggs, one at a time. The mixture will look smooth and glossy.
  7. Use a mesh hand sieve to sift cocoa into mixture. This prevents lumps. Whisk until the cake batter is smooth.
  8. Pour batter into prepared pan and bake in preheated oven for about 15-20 minutes. The center of the cake should be just firm to the touch, but be careful to not over bake the cake or it will be dry.
  9. Cool in the pan on a wire rack for 15 minutes. Invert the cake on a plate.

For Glaze:

  1. Melt chocolate and butter in a saucepan over low heat. Add the rest of the ingredients and stir until smooth. Let it cool, then drizzle over the whole cake! MMMMmmmm….

Assembly:

  1. Drizzle glaze over the whole cake, let it drip down the sides. Top with the homemade whipped cream, chocolate dipped strawberries. Then grate dark chocolate over the whole thing! Serve and enjoy.
