Lately, I’ve been wanting some muffins. (if you give a moose a muffin just popped into my head) The one thing about wanting muffins is, they have to be gluten free and healthy. A lot of muffins are loaded with sugar and that’s not healthy. Sooooo I came up with a recipe that’s healthy, loaded with fiber, omegas, low in sugar, has healthy fats and is just plain good. They won’t be your normal muffin. They are more fluffy, and moist. The nutmeg really makes these muffins good.
Now here comes the play by play of it all. I took a lot of pictures today.
Ingredients: (all ingredients are organic)
1 cup ground flax meal
1 cup almond flour or almond meal
1 tablespoon baking powder
1 1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup coconut oil
4 eggs
1/3 cup coconut nectar
1/2 cup water
Directions:
1) Preheat oven to 350 degrees
2) Mix together flax meal, almond flour, baking powder, nutmeg, cinnamon, and salt.
3) Heat the coconut oil slightly until it’s melted. Mix the the oil, eggs, coconut nectar, and water. Then add it to the dry ingredients and stir to combine.
4) Line a 12 cup muffin tin with muffin liners. Spoon the batter evenly (about 2/3 full) into prepared muffin tin. Then sprinkle a little cinnamon on top.
5) Bake for about 20 min or until a toothpick comes out clean. Allow the muffins to cool completely before serving.

I used both almond meal and almond flour in this recipe. Mainly because I don’t have enough to do either or. I make my own almond meal/flour so that’s all I had today.
