Gluten free, vegan chocolate chip cookies


I seem to be making a lot of gluten free, vegan recipes. However, I’m not vegan but I am 100% gluten free. These cookies are beyond delicious. They are scrumptious, decedent, chewy, and moist with rich pieces of dark chocolate. Wow, that makes my mouth water just writing that.

What makes these cookies so special is they are made with organic almond flour, organic raw coconut oil, and organic raw coconut nectar. So that makes them healthy for you! No more eating cookies filled with sugar or white flour and loads of butter. Besides who likes those cookies anyway? Well, ok I did a few years ago. But that’s all changed. You can create unique, delicious cookies that are healthy for you, taste good and you won’t feel disgustingly sick afterwards. Now that sounds more like a cookie I would enjoy.

This recipe makes about 35 small cookies.

Ingredients:

2 1/2 cups organic blanched almond flour
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/2 cup organic coconut oil (raw, unrefined)
1/2 cup organic raw coconut nectar
1 tablespoon vanilla extract
1/2 cup coarsely chopped dark chocolate ( I like to buy a bar of 88% dark chocolate and chop it up)

Directions:

Preheat oven to 350 degrees. In a large bowl, combine the almond flour, salt and baking soda. In a medium bowl mix together the coconut oil (you will have to slightly heat it to make it runny) coconut nectar and vanilla extract. Stir the wet ingredients into the dry until thoroughly combined. Fold in the chocolate, then refrigerate the dough for 20 min. Spoon the dough 1 teaspoon at a time onto the baking sheets.
Bake for 7-10 minutes, until lightly golden. Let the cookies cool for 5 min on the baking sheet. Then transfer to a wire rack and cool for 15 minutes. Then gobble them up!

Note: Almond flour is different than almond meal. I actually make our almond flour, which is slightly different than the almond flour you would normally buy. However, what I’m trying to say is it doesn’t matter if it’s almond meal or almond flour in this recipe. I actually did half almond meal and half of our home made almond flour. And it turned out great!
