Melt-In-Your-Mouth Stuffed Tomato

When I woke up this morning, my mind was filled with visions of ideas for a recipe. My mind was searching the fridge, cupboards, counter for ingredients to create the visual in my head. I love the way the mind thinks and can process things. Half the recipes I create all started in my mind, searching the kitchen in my head and subconsciously putting together a irresistible recipe. Only waiting for my hands and body to make it come to life while my taste buds wait patiently for the image I created to actually enter my mouth.

I don’t know what triggered my mind to decide to put this together. Maybe there was something in my dreams last night, who knows. What I do know, is that this is exactly what I had in my head. It’s like magic, taking an image and actually creating it, with flavor, texture, and a wonderful smelling aroma.

I’ve been in the kitchen since 2pm, it’s now 8pm and I’ve finally finished baking, cooking, and cleaning up my wonderful mess. My belly is satisfied and my taste buds are happy. I’m sitting in bed, with a nice cup of herbal tea, a very happy cat, and Ed Sheeran playing nice music in the background.

I absolutely love baking / cooking, it’s the only thing that calms my mind. All my worries disappear while I’m in the kitchen creating. My mind is calm, my thoughts are pure and my hands are busy putting together a masterpiece. When i’m by myself I go into a zone, everything around me disappears and the room becomes silent. The only thing I hear is the music I have on, the mixing of the ingredients, and my own thoughts. Everything else is gone, I become lifted up into another world, where it’s just me and the kitchen. When I’m joined by another person it becomes me and that person in our own world.  I could never live without a kitchen, it’s the most important part of a home. It’s where family gathers, love is created, food is shared, memories form, and where laughter is heard. A kitchen is where you express your true self. It’s where you put all your love and passion, in the food you create and the people you share it with.

For this recipe, I don’t have the exact measurements. This is what happens when I cook. I never know exactly what I’m putting in the food. I just trust my feelings and throw different ingredients in, not measuring, not being aware. My tastebuds take over that job. Now when I bake, yes I do measure. Baking is different, it’s more of a science, a chemistry, one thing off and the whole thing could turn out quite strange. I’ve had a lot of funny, unbelievable baking mishaps. But you can never get better without mistakes, and the mistakes that happen in a kitchen make me laugh and say “Oh My!”

INGREDIENTS: Makes 2 servings (measurements are approximate)

2 organic large tomatoes

1 organic avocado

2 small organic breakfast sausages

2 organic eggs

1/4 cup cooked organic sweet potato

1/2 cup organic mushrooms

1 cup organic spinach

1 teaspoon organic parsley

2 tablespoons organic shredded mozzarella cheese

salt and pepper to taste

italian seasoning to taste

DIRECTIONS:

1) Preheat oven to 325. Dig out the inside of each tomato, and save in a separate bowl. Place tomatoes on a cookie sheet and bake about 10 min until soft.

2) While tomatoes are baking, sauté the mushrooms in olive oil, then add the sausage, spinach, chopped left over tomato and sweet potato. Season with salt, pepper, and italian seasoning. Once it’s all cooked put into a separate bowl.

3) Crack the 2 eggs in a bowl, add salt, pepper, and italian seasoning to taste, plus a little water (this makes the eggs fluffy).  Pour into a hot pan and scramble. Once almost cooked add the mushroom mixture and gently mix together.

4) By the time you finish the egg, mushroom mix the tomatoes should be done. Take them out of the oven, pour any liquid that formed inside, out. Add a little bit of the cheese to the bottom on the inside of the tomato. Then really stuff the tomato with the egg mixture, push it down and load it up. Then sprinkle cheese on top, put it under the broiler until it melts. Sprinkle with chopped parsley and top with a few avocado slices.
