Organic Summer Salad


salad with cottage cheese and veggiesIt’s summer, summer, summer time! Run out into your garden (go plant a garden if you don’t have one) and pick all your lettuce and fresh veggies! Because, it’s time to make a fresh, healthy, organic summer salad. Who doesn’t like salads?? You can create so many different variations. It’s a matter of running into your kitchen, knocking over anything that gets in your way. Throwing everything in your fridge on the floor. Grabbing a giant salad bowl and tossing everything together. BAM! One summer salad coming right up.

Okay, maybe not tossing EVERYTHING. That could get a little disgusting. Just throw in lots of veggies, avocado, and some peaches. Mmmm… Now THAT sounds good.

I made this salad almost everyday for a week for lunch. It was so good, I can’t even explain to you how wonderful it tasted. Maybe I got knocked out while I was eating it? That does tend to happen… Who knows… Anyway, I suggest you run around your kitchen and whip up this delightful, filling summer salad!

INGREDIENTS: Serves 1 (that bowl is actually a normal 1 person serving!)

  • 1 big handful organic mixed greens (from your garden or farmers market if possible)
  • 1/4 cup organic brown rice
  • 1/4 cup organic black beans
  • 1/4 cup organic peas
  • half of an organic cucumber, sliced
  • half of an organic tomato, cubed
  • 1/3 of an organic peach, cubed
  • 1/3 of an organic avocado, sliced
  • 1/4 cup organic cottage cheese
  • balsamic vinegar
  • olive oil
  • salt and pepper

DIRECTIONS:

  1. In your single serving salad bowl add the lettuce, brown rice, black beans, and peas. Then drizzle everything with balsamic vinegar and olive oil. Toss it all together, coating it all with the oil and vinegar.
  2. Then add the sliced cucumbers, tomato, peach, and avocado. You can design it like I did. I always make my food look good, it’s kind of a habit/ addiction.
  3. Crack fresh pepper over the whole thing, sprinkle with sea salt.
  4. Then add the cottage cheese nicely on top
  5. Drizzle a little more vinegar and olive oil over the whole thing.
