Quick Easy Summer Grilled Chicken – Need I say more?


chicken thighs with herbsOne of my favorite things about summer is grilling. Almost anything grilled is delicious. Grilled peaches? Oh goodness… I would like to fill my mouth with them. Grilled veggies? Ummm, YES please! Burgers, chicken, fish, pineapple, MARSHMALLOWS… The list goes on and on.

Sometimes a simple seasoning on your food is all you need. This dish is grilled organic free range chicken thighs (bone in, skin on) seasoned with some freshly ground pepper and himalayan sea salt. How easy is that? Then after its all grilled, dump a ton of freshly chopped herbs over it. Yum! I love chicken thighs because they are so tender and juicy, add the crispy grilled seasoned skin and you have a lip-smacking, finger-licking dish. Serve with some grilled veggies and BAM!

INGREDIENTS: Serves 2

  • 4 organic free range chicken thighs (bone in, skin on)
  • himalayan sea salt
  • freshly ground black pepper
  • 1/3 cup chopped fresh basil, parsley, thyme (mixed together totaling 1/3 cup)
  • Grilled veggies (Zucchini is nice)

DIRECTIONS:

  1. Heat up your grill. Season the chicken thighs with salt and pepper, both sides. Place on the grill and cook until done.
  2. For the zucchini, cut into thick slices. Rub olive oil on both sides and season both sides with salt and pepper. Grill until soft and has nice grill marks.
  3. Once chicken is done, place on serving plates and top with chopped herbs. Add the grilled veggies and enjoy!
