Raw Energy Bars – purely heaven in my mouth 1


So I lied on my last post. I mentioned that the next two recipes will be old (before I found out what all I was allergic to). I gave up on that and began creating recipes according to what I could actually eat. Which isn’t the norm at all. So instead of posting a few old recipes (who wants to continue in the past?), I’m going to post all new recipes from now on. “New” as in, everything I can eat that doesn’t have all the things I’m allergic to. Which basically is becoming an all raw diet!

Here is the first recipe starting my new diet – change in life. This recipe is gluten-free, dairy free, egg free, almond free, peanut free, pecan free, soy free, oat free, etc. – you get it.

They are delicious and surprisingly I’m not gobbling them all up, they are very filling and satisfying. I’ve been doing better with that, food last a few days longer in my house. These bars (like mentioned in the title) are purely heaven in my mouth. They are beyond delicious! Each bite ignites so many wonderful flavors in my mouth that blend together into a harmonious taste bud explosion. Gently biting into one of these bars takes your breath away by how wonderful it tastes. Your stomach and mouth will be happy and satisfied by the time you finish your first bite. But self control is really mandatory. You may feel satisfied, but by the way they taste, you want to keep that excitement going. How’s that for a quick description? Pretty good huh? Now you really want to make these! They are quick and easy, the hardest part is not eating it all out of the bowl!

Ingredients: Makes about 15 bars
All ingredients are organic

1 cup walnuts
1/3 cup chia seeds
1/3 cup ground flax seeds
1/3 cup hemp seeds
1/4 cup cacao nibs
1/4 cup coconut flakes
3/4 cup pumpkin seeds
1/2 cup raisins
10-12 dates
2-3 tablespoons melted coconut oil
1/4 cup goji berries

Directions:

1) Put all ingredients in a food processer (except raisins, goji berries and dates). Make sure to leave about 2 tablespoons – 1/4 cup of each ingredient out. You will add the rest of the ingredients at the end. Blend the ingredients together. Once mostly incorporated, add the raisins and dates. Blend until sticky and easily presses together. If too dry add more dates or raisins.

2) Now add the left over ingredients you put aside and mix them in with your hands – this includes the goji berries.

3) Line a pan with parchment paper and spread the mixture onto the pan. Press it down and form it into a nice big rectangle about 1/4 – 1/2 inch thick. Refrigerate for an hour or more, then cut into squares. Stores up to a week in the refrigerator.

There ya have it! Enjoy! I will be posting new recipes every weekend, 1-3 new recipes for all of you! I’m going to have to save more money in my owl bank. Baking gets pretty expensive (specially organic, raw baking) But it’s so worth it!
