The making of Gluten free buckwheat bread and an insane workout


Currently I am making some Gluten free, vegan buckwheat bread. If you’re gluten free, you know how hard it is to actually find baked goods that are healthy for you. Almost all gluten free items are made with rice or “white” flours which are basically empty carbs and end up turning into sugar when consumed. Plus a lot of gluten free items are loaded with GMO’s. You most definitely don’t want that! The hardest part about being gluten free is trying to find healthy grains. So, that’s why I’ve begun making a lot of our baked goods and adding healthy grains into our diets. Besides anything homemade is soooo much better. This bread is made with buckwheat flour ( which is high in protein), arrowroot, tapioca flour, flax meal and chia seeds.

The bread is currently in the oven. It takes 2 hours to bake. Once it’s done I’ll post a recipe. What do you do for 2 hours while waiting for the bread? Well I’ll tell you what I did. Have you ever heard of the work out tapes called insanity? They are insane I tell you! For the past month I’ve been telling myself to work out. But telling yourself something doesn’t always make you actually do it. Plus I was making up excuses. We live in an apartment and we are on the top level. So my excuse for not working out was I didn’t want to bother the lady below us. But I can’t let myself waste away just because we live in an apartment. So since I had 2 hours to kill I finally put the insanity workout on. Now the first time is just a fit test to see where you are before you begin the 2 month insane workout. But believe me the fit test is also insane! I have to say I did better than I thought I would. I think it was only 30 minutes and by the end of it, I was sweating like crazy. My fore arms were even sweating! I thought that was only possible in hot yoga. Apparently not.

So afterwards I breathed like a dragon trying to walk off what I just put my body through. Then made a REALY healthy smoothie with maca powder, warrior protein powder, vital green powder, camu camu powder, flax meal, cacao powder, banana and almond milk. Of course it was all organic.

I still have 45 min left until the bread is done. However I now am walking to the post office. My abs are already sore and my legs are aching. But I love it!

Once the bread is done I’ll post the recipe with a beautiful picture!
