The wrong way to make Macarons


I’ve been trying to make Macarons for three hours now…I have know idea why I keep messing up. Maybe because it’s almost 11:30pm. I’ve made these macarons before and I never messed up, they weren’t perfect, but I never made a mistake. And now? Well I have nothing to say. I am ashamed.

It all started at work today after I was slave driving the workers to work harder and go beyond our goal. Which we did! Anyway since I was so hard on them and they did a great job, I wanted to make them something special. I left work around 5:30 and headed home. I went home and realized we didn’t have some of the ingredients so I went to the store. While I was at the store I called my best friend whom I haven’t seen in over 2 years. Which got me side tracked and I ended up staring at sugar for an hour talking, which probably looked like I was talking to myself.

Finally I got everything I needed and drove home around 8pm.

1st mistake: I started to crack the egg whites into the bowl, but I don’t know where my mind was and I ended up cracking the whole egg in it. Oops. Scooped that out before the yoke broke.

2nd mistake: I started to beat the egg whites until soft peaks formed. However I lost track of time and over beat the eggs. Golly…

3rd mistake: While trying to sift the flour, and watch the egg whites, I managed to completely burn the sugar. The house filled with smoke and now in pretty sure I smell like burnt sugar.

4th mistake: While trying a second time to melt the sugar I burned it again. And that was the last of the sugar we had. So I had to run to the neighbors house and ask for some sugar. “please sur can I have some more sugar?”

5th mistake: While trying a second time to beat the egg whites I managed to over beat them once again… This time I didn’t care. I kept the now runny, messed up egg whites and added them to the almond flour.

6th mistake: I spilled egg all over myself. Yuck

7th mistake: When I was pouring the boiling hot sugar into the egg whites I burned my hand on the pan. Ouch

8th mistake: I was so fed up with my errors I decided to just add everything else and bake it. However I forgot the most important ingredient. The mint…

9th mistake: I wasn’t paying attention and I over cooked the macarons.

10th mistake: I ate 6 of them…

As you can see there has been a lot of mistake tonight. And the Macarons still aren’t done. That was just the cookie part I was making. I still need to make the ganache to go between the cookies. I suppose ill wake up early and do it then.

I have know idea why I messed up so many times. I’ve never had this much of a problem with baking before. I guess I’m more tired than I thought. But I always remind myself. If I can make a perfect soufflé, that means I’m not so bad after all.

Sometimes the easiest recipes I completely screw up. For instance, I always mess up oatmeal. I don’t think I’ve ever made it right.
