Vegan Raw Nut “Cheese”


Wow! Who new nuts could taste so good! This nut “cheese” is creamy, delicious and flavorful.
Since I’m, of course, allergic to dairy I wanted to make something similar to cheese that would satisfy my rather picky taste buds – super organic, raw taste buds.

No kick in the gut, slap in the face insane flavor like some of my other recipes. That’s only because it’s creamy, smooth, decadent, herby, nutty, and just plain nice. Spread it on a raw cracker, veggies, or on a lettuce wrap sandwich. Prepare to slowly slide down your chair, with a mouth full of yum!

Ingredients:

1 cup organic raw cashews
1 organic garlic clove
6 sun-dried tomatoes
2 tablespoon organic lemon olive oil
2 tablespoons organic freshly squeezed lemon juice
1/4 cup water, as needed
1 1/2 teaspoons Herbs De Provence
Pinch of Sea Salt and Pepper

Directions:

1) Blend all ingredients in a food processor until smooth. The consistency will be almost like hummus.
2) Put in a cheese cloth that’s draped in a colander, sitting in a bowl and gently form it into a wheel shape. Let this sit out on your calendar for 2 days. This will dry out the exterior, making it less of a hummus consistency and more of a creamy cheese texture.
