Sweet Potato, Quinoa, Chickpea Pancakes!

What do all those tasty ingredients make? Pancakes of course! I literally just made these up with what we had around the kitchen. Some cat hair, dog food, shredded towels, you know the usual stuff around a kitchen. Yum!

These really were just made with random ingredients and they turned out beautifully. I honestly didn’t feel like getting my butt off the couch to cook (one of those days). And I really didn’t want to put down the jar of my homemade granola (another one of those days). Can someone come give me a foot massage? If you looked in our fridge you would be wondering if we even eat. I personally just throw out all the food in the fridge so it looks clean and organized (I do the same thing in my bedroom. Empty closest = professional organizer) . Doesn’t everyone?

These are super easy to make! You know what makes these fun? You can be creative and throw whatever you need to get rid of, right into the batter! Your child’s goldfish died? Throw that in! Get creative. Have fun with it.

I honestly didn’t want to eat these because I was so full. I have this condition called no self control over prepped food. There were more chickpeas in that bowl, same thing with the peppers and quinoa. And the egg? Yeah, there were two…If I ever make you dinner and I’m not eating, there’s a reason. Your plate should be more full – I ate half while you weren’t looking. Watch out for my sneaky little hands. Gobble, Gobble.

Now lets see, you probably want to make these. Okay, okay I’ll tell you the ingredients and step by step directions!

Luckily, I took great care in measuring the ingredients – before I gobbled half of it up.

Sometimes when cooking pancakes like these, it can be hard to tell when they are done cooking. Want to know how I tell? Well once you put them in the hot skillet to cook, leave the kitchen and completely forget. Before you know it you’ll be frantically running back into the kitchen, tripping over an elephant and stepping on a squirrel (oh, not real animals of course. Stuffed animals that seem to be thrown around the house no matter how often I pick them up. I swear my dog is a toddler). It creates a good obstacle course. By that time I’m at the stove, carefully slipping them over, only to realize… Wow, they are perfectly burnt! Job well done, Emma. Job well done. And that cycle literally happens e.v.e.r.y.t.i.m.e… My mind left the room for a bit… and never came back.

After these were cooked and topped with yummy applesauce or any random ingredients you find under the sink, make sure to turn the stove off. Just saying… Not like I forgot or anything… And also, one last safety tip. Don’t forget about the sweet potatoes in the oven. Again, not like I forgot or anything, just a thought for your own safety. Maybe I should’ve stayed on the couch with my jar of granola…

– Makes about 12 medium pancakes –

INGREDIENTS:

  • 1 cup organic chickpeas
  • 1 cup organic cooked quinoa
  • 1 cup organic cooked sweet potato
  • 1 cup organic diced red bell pepper
  • 2 organic free range eggs
  • 1 packed tablespoon chopped parsley
  • 1 tablespoon diced chives
  • salt and pepper to taste
  • 2 tablespoons organic extra virgin olive oil
  • coconut oil for frying

DIRECTIONS:

  1. Mash all the ingredients (except coconut oil) together in a bowl, until it becomes sticky and forms easily.
  2. Heat a large skillet with 1 tablespoon coconut oil. Get a good spoonful of batter, plop it in the skillet and flatten/form into a pancake. Cook until bottom is dark brown, carefully flip (I used a spatula and a spoon to help). Fry again until other side is brown.
  3. Continue, until all batter is gone. For each new batch I added more coconut oil for frying.
  4. Top with apple sauce, sour cream, cashew cream, or any random ingredients under your sink. Enjoy!
