Gluten-Free Dairy Free Almond Flour Waffles – yes, please!

Just stare at that picture for awhile… Enjoy it, let your mouth water. I can’t get enough of these waffles, they’re so good! Crispy on the outside, soft on the inside, with burst of flavors that ignite in my mouth, I never want to swallow, it taste too good to leave my mouth. Topped with home made apple sauce these waffles will make you jump for joy, I sure did! Just make sure you’re not near anything that you could knock over. There is now a mess in the kitchen and some very happy animals. Oops.

INGREDIENTS: (All ingredients are organic)

2 cups almond flour

2 teaspoons baking powder

1/8 teaspoon ground nutmeg

1 teaspoon cinnamon

2 eggs

1 teaspoon vanilla extract

1/2 cup unsweetened almond flour

2 packed teaspoons lemon zest

1 Apple

DIRECTIONS:

1) Preheat a waffle iron, you will most likely need this.

2) Put all of the ingredients into a large bowl and whisk away vigorously, get that batter fluffy. It should be loose and pourable, it really shouldn’t be thick and clumpy. Image

3) Make that applesauce, cut up an apple in half, then in half again, then again and again and again. Okay, no just in half twice. Put it in a sauce pan with a lid, add about a tablespoon of water, put the lid on top and turn the burner up to medium high heat. Let it boil, then simmer, once the apples are soft, mash them. You may cut the skin off if you don’t like it. But it adds so much.

4) Now make the waffles, pour batter into the waffles iron, shall I say more? I think we all know how to get it done from here. But wait! Don’t forget to spray the waffle iron before, you don’t want it turning out like this…

And that is what happens if you don’t grease the waffle iron before hand. Note: the waffles should not look like this. If they do you obviously did something wrong. I’m just going to brush this on to the floor now, under the cabinet…out of site, this is humiliating…I am once again ashamed…goodbye self esteem…

5) Now top the waffles with the applesauce, and serve with you’re favorite syrup topping. But please use some decent, pure syrup. No syrup with a lady on the bottle, that’s just creepy.
